I love Umbrian cooking, having lived there for a year (1997. Your recipes sound incredible. I've got a recipe from porchetta straight from the chef's mouth in Citta della Pieve. If you want it it's yours.
That reminds me, you still owe me the recipe for that lamb your wood-fired roasted on the grill in West Stockbridge about 5 years ago. I can still taste it.
